Red Velvet Cupcakes ! ( From Tasted by Two )

Anyone who is a fan of Sex and The City will know the name Magnolia Bakery right ? mmmm drool ! The single most amazingly beautiful delicious cupcakes in the world ! No im really not exaggerating. Well not only do I have a weird obsession for cupcakes but I have a really obsessive love of red velvet cupcakes and this one is the Magnolia Bakery version. Now I could whip up a recipe of my own on here and I have a few variations but to be honest none of them are as good as these. So rather than give you a mediocre recipe here is one I found from Magnolia that will knock your socks off  !!

Magnolia Red Velvet Cupcakes (yields 24 cupcakes)

3 ¼ cups of plain flour
3/4 cup unsalted butter, softened
2 ½ cups sugar
3 large eggs, at room temperature
6 tbsp red food coloring
3 tbsp unsweetened cocoa
1 1/2 tsp vanilla extract
1 1/2 tsp salt
1 1/2 cups organic full cream milk
1 1/2 tsp cider vinegar
1 1/2 tsp baking soda

Preheat oven to 175°C. Grease and lightly flour 2 cupcake pans.

In a small bowl, sift the cake flour and set aside. In a large bowl, on the medium speed of an electric mixer, cream the butter and sugar until very light and fluffy, about 5 minutes. Add the eggs, one at a time, beating well after each addition. In a small bowl, whisk together the red food colouring, cocoa, and vanilla. Add to the batter and beat well.

In a measuring cup, stir the salt into the milk. Add to the batter in three parts alternating with the flour. With each addition, beat until the ingredients are incorporated, but do not overbeat. In a small bowl, stir together the cider vinegar and baking soda. Add to the batter and mix well. Using a rubber spatula, scrape down the batter in the bowl, making sure the ingredients are well blended and the batter is smooth.

Divide the batter among the prepared pans. Arrange the oven racks in the upper and lower thirds of the oven and bake the cupcakes, switching positions of the pans halfway through baking, until a tester comes out clean, about 20 minutes. Cool the cupcakes in the pan 10 minutes, then remove from the pan and cool completely on a rack before icing.

Cream Cheese Frosting

300g cream cheese (spreadable cream cheese or mascarpone are both fine)
1/3 cup unsalted butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar, sifted

With an electric mixer, blend together cream cheese and butter until smooth. Pour in powdered sugar, salt and vanilla extract. Turn mixer on high and beat until light and fluffy. Fill a piping bag with the icing and spread over cakes. Big and swirly is the key!

Catherine Deveny – God is Bullshit – Blogs I love !

Anyone who is on twitter these days will know who Catherine Deveny, Famous for her hilarious, informative and challenging views on God, the Universe and everything in between. Catherine Deveny has made a name for her self with her brutal honesty and no holds barred jokes. She is appearing this month for the Melbourne International Comedy Festival with her hugely successful show God is Bullshit.

Catherine is famous for her antics last year and her subsequent sacking from her job for tweeting during the Logies. And lets face it, she said what most people were thinking but just weren’t brave enough to say. This year Logies organisers have banned the use of mobile phones during the Logies telecast to avoid Twitter feeds going off in the way they did last year. ABC’s The Drum today asked Catherine Deveny to comment on how she feels about The Logies banning mobile phone use and I have included the link to this article so you can see her response.

Anyone who reads my blog regularly will know I’m a huge fan of outspoken women ( being one myself at times) and Catherine Deveny is one of the most outspoken women in Australia at the moment. With her atheist views winning new followers everyday and her impassioned work for charities and underdogs who are treated poorly in the work place, she is a woman to be admired. Whether you agree with her or not, she is hilarious, witty and says exactly what she is thinking!

I know many who love Catherine as much as I do and many who fear her also. But why fear someone who is willing to speak their truth and not be intimidated ? If you don’t like her views don’t listen. But if like me you find her hilarious then follow the links I’ve included it’s a great laugh and very informative reading !




Bite the Book….A book blog by a Bookseller…what could be better ?

Lately I have done a bit too much babbling and not enough book talk so today I decided to share some of my fave booky blogs with you. It may or may not have something to do with the fact that I am *cough ahem….featured on both blogs.

Well as mentioned im a huge fan of books and all things book related and of course like any truly obsessed bibliophile I have the extreme luxury of working in a book store (cue swooning) but not just any book store, oh no, not some chain store nightmare with zero personality and mass market appeal. No no no I work in a shining beacon of intelligence and culture……An Independent book store. (yes im a book snob and im not ashamed to admit it)

So obviously being a bit of a boutique industry we book sellers like to stick together and I can’t write about books and blogs and book stores without mentioning another shining beacon of culture nestled in lovely NSW.

A little haven away from the madness and hustle and bustle Pages and Pages Bookstore. Run by the lovely and aptly named Jon Page. Now Jon is not just a purveyor of literature, he runs a website packed full of great reviews and book news that you should check out!

I have of course included the link for you to check it out and you should its a great site for anyone who loves to read.



Book Thingo….a great book blog for Romance lovers

As any good book lover knows finding websites that will feed you obsession are sometimes hard to find. Yes I know there are a lot of book websites around the place and many amazing ones run by booksellers (Insert shameless plug here …..yes check out TLC Books) But the thing I’m talking about here are tailored sites, genre specific sites.

Well if you’re a lover of romance stories then Book Thingo is for you!! Run by an impassioned champion for all romance reads, the delightful Kat. Book Thingo is a must for lovers of romance reads and anyone who is interested in discovering this little known genre that is actually a massive part of the Australian book industry.

Romance reads are often overlooked as fluff or the domain of women who read blouse heaving novels but that isn’t really the case. Romance novels are a wonderful form of escapism and for anyone who is feeling a little loveless they are a great way to live vicariously !

Go on check it out, romance goes way beyond the Mills and Boon of days gone by. You may be pleasantly surprised by what you find.

Hyperbole and a Half – Blogs I Love

So I have to say this right here and now, there is few things in laugh that really make me laugh. Dont get me wrong here I love to laugh and seize any opportunity for a giggle but lets face facts there just isn’t that much around these days that is genuinely laugh out loud funny. And im not talking an amused smirk, or a hearty chuckle im talking all out belly laugh !

Which is why I have to share this blog, I laugh my butt off every time I read it, I have referenced the jokes and sent it to as many people as I could but that is not enough. This blog is so funny I feel I have to share it with the world (yes im assuming rather vainly that you wont have made this incredible discovery for yourself yet) sorry about that ! Anyways its hysterical it makes me laugh constantly and it never gets old so do yourself a favour and check it out. If you don’t like it well too bad for you then 🙂

I have to say that God of Cake is quite possibly the funniest thing known to man although there is also a cracker of a post called party which you must check out. I have just finished a massive piece of cake myself and the whole time I was eating it all I could think of was that blog. Mainly because my body is so deprived of sugar that I get a contact high just from being in close proximity to cake let alone eating it !

Becky Wicks – Blogs I Love

OK so if you haven’t heard of this author you must be living under a rock somewhere. I have reviewed her amazing début novel Burqalicious The Dubai Diaries for you all to have a read of and to urge you to go out and get it because lets face it, Becky is a writer and she rocks at it!

My review is here on my blog and if you like what you have read and want to read more than click on my picture in the authors section of my blog which will link you through to my work blog TLC Books. I recently had the fantastic “task” of interviewing Becky and the results were hilarious! She like her novel are fresh, witty and altogether hilarious.

But of course you know by now or I hope you do that I wont just recommend someone because I like their book, oh no. There has to be more to it than that, and of course I haven’t let you down here either. Not only has Becky written this great book but she is also a phenomenal blogger, she writes everyday and is always funny and entertaining.

For fans of her book her blog will be a further extension to the fun you shared reading Burqalicious, and for people who are just now discovering Becky well you’re in for a treat ! Her blog is great with more info from her time in Dubai and stories of her life here in Australia.

So go on now what are you waiting for ? I don’t write this stuff so you wont go looking at it.

Birds Eye View – A Blog I love

Well here is another blog that I absolutely love! This is Birds Eye View by the fabulously witty Rebecca Sparrow.

For anyone who doesn’t know who Rebecca Sparrow is (shame on you) Here is a little introduction, She is among so many things a writer of four yes FOUR novels, one of which is in production to be made into a feature film. Rebecca is also a columnist for the SUnday Mail in Adelaide, Prior to that she was a columnist for the Sunday Mail in Qld. As if that wasn’t enough she is also a columnist for

Think that’s impressive ? Yeh ? I’m not done yet, She is also ambassador to two charities, War Child Foundation and The Pyjama Foundation. And devotes a lot of her spare time (I use that term loosely, She doesn’t have any free time) to mentoring young women in schools around the country.

Yep I know your sighing inwardly thinking wow! how does she do it ? Well wait there is more she is also a Mother and a Wife ! Yep that’s right starting to understand why I admire her so much ?
